   - [ ] Here are some details about my PR, including screenshots (if applicable):
   
   Not all iceberg replication schemes require copying 'metadata.json' files, perhaps because the dest-side catalog will generate its own, rather than reusing those from source.  moving these files nonetheless add the requirement to manage their lifetime on the replication side, which did not actually create them.  Provide config to skip the copy altogether... and default it to skip.
