When rendering attached PDF document, the result differs from the result of most other PDF renderers, including Adobe Reader, in that PDFBOX is not rendering the '€' char. 

The font that is used has name 'Symbol' and can be considered as one of the standard 14 fonts. It's dictionary is pretty simple:

<</BaseFont/Symbol/Type/Font/Subtype/Type1>>
