ssh characters not rendered with correct encoding

Hello,

I have a weird issue with one of our server accessed by ssh via
guacamole : characters are sent in ISO-8859-15 by the application, then
rendered in UTF-8... so some of them are missing (accents) and garble
the display.

Is there a way to tell guacd to unconditionally transcode an arbitrary
encoding to UTF-8 before rendering ?
