Well, it just goes to show that as soon as you post something to a public forum you'll stumble across the answer.

It turned out that I needed to move my mm-mysql driver from my application's WEB-INF/lib to $CATALINA_HOME/common/lib. As soon as I did this (and restarted tomcat) it started working. D'oh!

I'm sure I'll have other questions, but for now this one is solved.
