apache 2.0: SSI parsing of reverse proxy output?

I'm using a RewriteRule to reverse-proxy content from a (non-apache) 
backend server. I would like to be able to further mangle the response 
content and headers, e.g. process SSI's, add user tracking cookies, etc. Is 
there any way to do this? So far none of my Cookie/Header/AddFilter 
directives seem to take effect on reverse-proxied output.
