NtEventLogAppender: How to control what is sent to the Category and Event fields of the Windows Application Log

I have specific information I would like the NtEventLogAppender to store in
the Category and Event fields of the Windows Application Log, but am not
sure how to do this.  Can anyone please help me with this?  Thanks.
