[PR] docs: update screenshots, improve clarity and flow [airflow]

Rewrote the “Why Airflow” section to improve narrative flow, tighten language, and reduce redundancy. Grouped related ideas (e.g. scheduling/backfilling and UI interactions), clarified phrasing around extensibility, and smoothed the conclusion with community references.
Other than adding new screenshots for Airflow 3, no content was removed—just restructured and refined for readability.
