Following [~ptuomola] PR [https://github.com/apache/fineract/pull/1069/files] for FINERACT-835, we can now see stuff on [http://localhost:8080/fineract-provider/swagger-ui/index.html#/] but the very start of it, that top level description "Apache Fineract is a..." which has many links to [https://demo.openmf.org/api-docs/apiLive.htm] looks weird, now that we have apiLive.htm bundled in the app..

As a first step, let's just replace all those links with absolute root links to the instance's own self-hosted doc.

The goal of this issue should be that searching (grep) for "openmf.org" finds no more matches at all.
