Where are you looking?
On http://maven.apache.org/reference/plugins/java/properties.html the maven.compile.target property is defined. Yes, .source is defined twice...but target is still defined.

I found this bug in Java-Plugin web-site. In properties documentation mave.compile.target property is missed. But maven.compile.source property exist twice :)
Seems one of them should be renamed to target.
