[OLINGO-377]: Improve test coverage support

Hi together,

With first changes (see [Git branch/commit [1]) the test coverage looks a lot better at latest build: https://builds.apache.org/job/olingo-377-cobertura/5/cobertura/.
I will do some further clean up and checks so that I can (hopefully) merge this enhancement next week in the master if there are no objections.
