destruct snapshot
Create a chart with three lines and points.
Change the line symbols
On the third change, the menus may disappear; trying to save the file returns
that the file does not exist. General input/output error.
OpenOffice chokes up and may crash.
File DOES NOT exist.
Not recoverable.

I do not run into this on Linux.
Have you tried to save the document before creating the chart?
How did you select the symbols?
I did try the following way:
1. click on the chart, the chart is selected (not the legend or the complete
box.)
2. righclick on the line i want to modify
3. Format Data series
4. select Icon
5. gallery -> select Icon
6. repeat steps 1-4
7. symbol -> select Icon
How did you tried it? - I will try again on my old mac.

I cannot confirm this either with the following configuration:
Intel (R) Pentium(R) CPU 4405U @2.10GHz, 2112MHz, 2(Core(s) 4 Logical
Processors
Total Physical Memory 8.00 GB
Operating System: Windows 10 Home OS Build 10.0.17134.407 Version 1803
Apache Open Office:
AOO416m1(Build:9790) - Rev. 1844436
Additional Language Packs: None
It would appear that this is possibly a macOS problem only. Could a volunteer
with macOS try to verify this?

screenshot of Testdocument failure
I downloaded your file "Testdocument crash on Chart" and it also failed on save
after the third line symbol change.
Rather than using the gallery menu, I use "Symbols" just below it.
Yes, I can save the file before doing the symbol change and it will reliably
hangup and obliterate the file after the third change.
