Are you seeing this when running TikaCLI -m?  Because I can see that only reports the first sheet name (I'll fix: it's just a bug in TikaCLI's -m handler).

But if eg I run TikaCLI -j (JSON) then I see all sheet names.

Or is there something else you're doing that only yields the first sheet name...?
