[PR] OpenAPI: Fix YAML example and value json formatting [iceberg]

__NOTE: this is a formatting change only__
The current open API document has some minor formatting issues related to embedded json examples. It appears that some formatter regard this indentation as incorrect including:
- https://editor-next.swagger.io/
- https://yamlchecker.com/
Other checkers like https://www.yamllint.com/, do not appear to consider this invalid.
Making these indentation changes works with all the validators. I would generally not make this change except that the [swagger editor](https://editor-next.swagger.io/?url=https://raw.githubusercontent.com/apache/iceberg/main/open-api/rest-catalog-open-api.yaml) is very useful for reviewing and understanding the rest protocol.
