Currently, it looks like the log level is not specified on the guacd command line, which means that default log level of info is used: https://github.com/glyptodon/guacd-docker/blob/ddf1061865d459d6c13c880ccea1c18eeffee6e9/Dockerfile#L69

For debugging purposes, it would be useful to be able to specify debug log level, for example via an environment variable passed to docker - like how the guacamole-docker container works. (e.g. if an end-user with a docker container just needs to get a more detailed log).
