[I] fix: add statistics files to PostCommit file deletion in ExpireSnapshots [iceberg-go]

Parent: #831
`removeSnapshotsUpdate.PostCommit()` at `updates.go:432` collects manifest lists, manifests, and data files for deletion when expiring snapshots. It does not collect `StatisticsFile` or `PartitionStatisticsFile` paths. Statistics files for expired snapshots are never deleted, leaking storage.
`Metadata.Statistics()` and `Metadata.PartitionStatistics()` are available (#577).
