Hi everybody,
is there a possibility to get the total number of extension listed at
http://extensions.services.openoffice.org/ ? Maybe listed by category or
simply all? Are these numbers somewhere documented on a statistics page
(similar to MediaWiki's Special:Statistics page) or even a RSS feed?

what is your problem?
Reload the page http://extensions.services.openoffice.org and click at the bottom right "last", count the extensions (=4), then click "previous" and count the extensions (=5) and read the page number (=156).
This will give you the total number of extensions: 4 + (156*5) = 784
