You can test this with the Order form:
http://localhost:8080/cocoon/Order
and pasting into the form an XML document with a non default encoding.
The response will always be an XML doc with encoding="UTF-8", losing the 
original charset.
This is very annoying with international language documents.

Starting some investigation as soon as my CVS client is up and running.
