If running jetty6:run with cli works ?
You need to increase eclipse heap size too.
$ECLIPSE_HOME/.eclipse.ini
Add this
-vmargs
-Xms512m
-Xmx512m
Or other values

You can try to set the MAVEN_OPTS environment variable. On windows its
set MAVEN_OPTS=-Xmx512m. There might be a way to give jetty in specific
more memory, but I don't know how (yet).
