starting bayes

Greetings

With spamassassin catching about 75% of the spam with the current .cf 
files, I guess it's time to set up Bayes, but I have a question or 
two...  Our setup FreeBSD, SA, MimeDefang, sendmail, and QPopper with 
several thousand users.  At the server level, how does one set up a 
mechanism to catch enough spam/ham other than going into users mail file 
in the /var/mail directory?  Forward then edit the message before 
feeding to sa-learn? ???
