docs(mentoring): align spec skill list with the family README (#897)
Why: the spec said seven skills while README.md in the same directory
says six. onboarding-concierge is family: contributor-growth, so it is
dropped from the family list, and contributor-to-committer now carries
the same cross-listed annotation the README uses. docs/modes.md counts
seven for the Mentoring mode because mode and family group differently;
that count is untouched.
Fixes #871
