Rob,

Just to let you know that I've used the Felix project's maven-bundle-plugin and from jetty release 6.1.5 onwards, the jetty jars will ship with osgi manifests. 
Right now, it is checked in to jetty svn trunk if you want to take a peek: 

https://svn.codehaus.org/jetty/jetty/trunk. 

Hopefully, this may ease the transition to jetty6 for the HTTP Service? If there's any help/advice I can give you, let me know.
