   解决了。 在deployment部署文件中把logs目录挂载到以pod命名的子目录下，相当于多了一级目录。
   
           volumeMounts:
           - name: logs
             mountPath: /usr/local/apisix/logs
             subPathExpr: $(POD_NAME)
           env:
             - name: TZ
               value: "Asia/Shanghai"
             - name: POD_NAME
               valueFrom:
                 fieldRef:
                   fieldPath: metadata.name
         volumes:
         - name: logs
           hostPath:
             path: /data/logs
