[I] Remove compiler warning for redundant config enablement [arrow-rs]

**Is your feature request related to a problem or challenge? Please describe what you are trying to do.**
A newer version of Rust makes a configuration of miri default, and now we are getting a [warning](https://github.com/apache/arrow-rs/actions/runs/17929606259/job/50983912404?pr=7819#step:4:125)
**Describe the solution you'd like**
Remove the line since it is redundant?
**Describe alternatives you've considered**
Not sure what else should be done
**Additional context**
[Blame](https://github.com/apache/arrow-rs/commit/2e6c7b94b7413e36154911caa9b4598f8ed03b9d#diff-3c0b00342d39c4542454c422dbf1e971ffab04c52519fd931c158be86cd667eeR20-R22) that added this line
