For how to assemble LICENSE and NOTICE see [1] There is no need to mention the copyrights of dependancies in your NOTICE file. You only need to mention relocated copyright statements i.e. those that have been replaced with an ASF header. There is no need to mention dependancies in LICENSE either, in general only 3rd party code that has been included in a release needs to be mentioned.
It looks like you have done the correct thing with the Bloomberg copyright, but there no need to include the apache license text.
I don't think your NOTICE file is correct with this line "Includes software from other Apache Software Foundation projects." Those project would have NOTICE files and you would need to include the relevant parts from them.
