The PR [FLINK-39204][pipeline-connector/fluss] Fluss yaml sink support add column at last (#4305) added support for AddColumnEvent in the Fluss pipeline connector.

What needs to be documented:

1. Update the Fluss pipeline connector documentation to indicate that AddColumnEvent is now supported.

2. Document the limitation: only adding columns at the LAST position is supported. Adding columns at other positions (FIRST, AFTER) is not supported.

3. Add a note about the recommended configuration: if users need more flexible schema change handling, they can use `schema.change.behavior=LENIENT` configuration.

Supported schema change events for Fluss sink:
- CreateTableEvent
- DropTableEvent
- AddColumnEvent (only LAST position)
