Can you use the "trim" features of the custom logs?

The only way to do this today is to log the entire Cookie request header then parse out the cookie name/value pair that I am interested in after the fact. The problem with that approach is that some cookie data is sensitive and must not exist in logs. Plus logging the entire cookie header is just wasteful.
