Looking forward to a new Pekko gRPC milestone.

In [playframework/play-grpc#890](https://github.com/playframework/play-grpc/pull/890), CI repeatedly failed while multiple protobuf-generation tasks were running concurrently. The failures occurred in different subprojects with an NPE in `protocbridge.FileCache.get`, so this was a shared protoc-cache race rather than a failing Play test.

   `pekko-grpc-sbt-plugin` 2.0.0-M2 still brings in `sbt-protoc` 1.1.0-RC1 and `protoc-bridge` 0.9.9. `sbt-protoc` 1.1.0-RC2 uses `protoc-bridge` 0.9.10, which contains the concurrency fix from [scalapb/protoc-bridge#480](https://github.com/scalapb/protoc-bridge/pull/480).

We have temporarily added an explicit `sbt-protoc` 1.1.0-RC2 dependency in Play gRPC. A new Pekko gRPC release containing this upgrade would let us remove that override.
