Using pdf.save as follows:

AccessPermission ap = new AccessPermission();
StandardProtectionPolicy policy = new StandardProtectionPolicy(password, password, ap);
policy.setEncryptionKeyLength(256)
pdf.protect(policy);
pdf.save(outputStream)
