help Build iceberg with jdk8 in iceberg new versions

As far as I know, iceberg has begun to abandon JDK1.8 in 1.7. However, it
is difficult to switch quickly within the enterprise because it involves a
huge infrastructure upgrade. If I want to use the latest iceberg version in
the Spark3.5 environment, can I modify the plugin code in Gradle to lower
the version to adapt to JDK8 compilation? If the community has a compatible
solution for this method or someone tells me the method, I will be very
grateful.
