fix(storage): follow the singular enum members into the shared LakeFS document

#7760 replaced DatasetFileDocument and ModelFileDocument with a single
LakeFSFileDocument parameterized by ResourceType, and DocumentFactory now
selects the type per URI scheme. Both were written against the plural
enum members, so the merge was textually clean but did not compile.

Rename the 15 references to the singular members. Enum members only; no
behavior change.
