[I] [Feature] Provide RHEL 10 RPM packages for apache-cloudberry-2.1.0-incubating [cloudberry]

### Description
I noticed that the project currently generates RPM packages for RHEL 8 and RHEL 9. With RHEL 10 becoming relevant, it would be highly beneficial to have official support for it as well.
### Requested Solution
Could you please provide RHEL 10 RPM packages starting with the `apache-cloudberry-2.1.0-incubating` release?
### Additional Context
Providing these packages will help users preparing to deploy or migrate to RHEL 10 environments. Thank you to the CloudberryDB team in advance.

Hi @aeschbacherEUF, thank you for raising this request. We had previously planned to provide this support; however, building an approved version 2.1 source code to run on Rocky 10 requires introducing some new changes first. You can take a look at this PR: https://github.com/apache/cloudberry/pull/1678
We plan to provide Rocky Linux 10 RPM packages officially from 2.2.
(If you have a strong need for this by now, I can create a private build for you - without quality assurance. Feel free to ping me on Slack — I'm Dianjin Wang.)
