I can not paste into the save file name field. It defaults to "Untitled 1."
Normally I can paste a file name here but after upgrading to Catalina it no
longer works.
Copy / Paste works fine in the actual document.

Could you provide a screenshot to see this?
This behavior is not typical and AOO works fine with MacOS all editions.
First, try to reset your profile:
