[jclouds-site] specifying wire and header log appender names

How about just integrating it into the previous sentence (which is a bit misleading already, actually)? Something like:
"...separated into different logs, called `jclouds.wire` and `jclouds.headers` respectively. Set these to `DEBUG` or more verbose levels for troubleshooting."
