My local dev build started to fail, due to cmake founding a wrong boost (it found {{-- Found Boost 1.70.0 at /home/joris/miniconda3/lib/cmake/Boost-1.70.0}} while building in a different conda environment.

I can reproduce this with creating a new conda env from scratch following our documentation.

By specifying {{-DBOOST_ROOT=/home/joris/miniconda3/envs/arrow-dev/lib}} it works fine.
