[PR] Skip reading large manifest entry columns when not used in ManifestFilterManager [iceberg]

During MergingSnapshotProducer commits, ManifestFilterManager reads and materialize every ManifestEntry in memory to determine if manifest entries need to be rewritten. However, the common case is only a small fraction of manifests are modified in a commit.
Instead, all manifests can be read in a lightweight projected way way (excluding large stats columns). Then only those manifest entries that need to be rewritten can be read in full.
For tables with large numbers of manifests, this can be a significant memory reduction. Benchmarks coming soon.

The ReplaceDeleteFilesBenchmark doesn't show a difference because the benchmark triggers the optimization from this PR: https://github.com/apache/iceberg/pull/11131
But for workloads that delete files which do not have manifestLocation populated, the optimization does not trigger. This can occur if a representation of content file is serialized because the client does not want to hold in memory all the content files while compaction is occurring.
