[I] [Task]: Update all tests to Junit5 (hop)

   ### What needs to happen?
   
   We should start moving away from Junit4, there is no real reason to think it will stop working but our code is a bit confusing now with the mix of Junit4 and 5 in the same codebase (sometimes even in same class files)
