Outlook (and Exchange)  have been known to strip headers that are "not
important" to users. We do have the procedures documented here, however:

Davmail + Thunderbird + configured ldap is the fix for IT department 
"outlooks" (not for the calendars unfortunately, calendars won't work 
reliably in anything else than "outlook"). Use web-base outlook owa for 
them.

It's not bad, its just terrible.

Some of us are stuck with what our IT departments give us to work with.  If you want to work with an Exchange server, it's easiest (and most compatible) to work with Outlook - particularly if the PC has it preinstalled.

In reality, Outlook is not that bad an email client - provided you don't want to do technical things with it.  The integration with the calendar functionality is particularly valuable for those of us who lose track of time when working.  Voting is a nice feature, too, that we sometimes use.
