Does any better (more in-depth) documentation exist about how sitemap
works?

That rings warning bells in my ears. I'm a big fan of Open Source but I think
that I should be able to use it without reading the source. Sure I'll read the
source if I want to enhance the software, but not to use it.

The most comprehensive documentation I found about how sitemaps works -
sitemap_xmap.xsl, you could find in cocoon sources - it's how the
sitemap is transformed to java for further compiling...
