[I] Re-enable docker-compose demo test as part of integration tests [hudi]

### Task Description
**What needs to be done:**
Enable `org.apache.hudi.integ.ITTestHoodieDemo#testParquetDemo` again.
**Why this task is needed:**
`org.apache.hudi.integ.ITTestHoodieDemo#testParquetDemo` has been disabled for more than a year now and it'll be good if we can re-enable it to validate cross engine support safely.
However, re-enabling requires quite abit of test-harness improvements and hence, we will be creating an umbrella issue to track this.
