When and what would SA place on the above tag?

Well, you don't have to remove it, it's just not needed. SA always internally
generates that header for it's own purposes, your local.cf option is just
forcing it to be added to the message, something SA doesn't normally do.

You can leave it in place for informational purposes if you like. It could be
very useful to have in place if you're tuning your trusted_networks settings.

Thanks Matt, then I assume I should remove add_header all Trusted Relays 
_RELAYSTRUSTED_ from my local.cf?

That shouldn't end up in your email. That's an internal pseudo-header. SA places
