### Describe the enhancement requested
We have excellent and comprehensive documentation for our R6 objects, and we've got lots of helper functions so that package users don't have to deal with instantiating R6 objects to work with Arrow, but our docs are still very entangled. We should split out the docs for R6 classes vs. helper functions, so that our documentation is easier to work with. See #35543 for an example of this.
We should also update our pkgdown site to better organise how we group our functions.
