We have RAT checking the files, we have the install bits uploading, we save the entire log set.

I think it would be good to have the
tarballs of the nightly builds (ooo/main/instsetoo_native/*/OpenOffice/archive/install/*/OOo_*.tar.gz)
and their corresponding detailed packaging logs (ooo/main/instsetoo_native/*/OpenOffice/archive/install/log/log_*.log)
deployed somewhere, e.g. into http://people.apache.org/builds/commons/nightly/commons-ooo
Since the tarballs are rather big (>100MB) there should be a mechanism to automatically purge all but the last N binaries.

Ok this is done. I separated out the script into logical build steps.
Note your original package list missed out 'Autoconf' , 'Zip' , 'Unzip' , 'dmake' , otherwise the list was good thanks.
You'll see the Buildbot config file at
https://svn.apache.org/repos/infra/infrastructure/buildbot/aegis/buildmaster/master1/projects/openofficeorg.conf
specifically the b_ooo_1 builder which runs nightly. Results of builds can be seen at http://ci.apache.org/builders/openofficeorg-nightly clicking into any reveals each step performed.
