Wouldnt it be nice to have a DisplayValuesOnly attribute for the form component to switch the whole form into
a "display values only" mode, much like the individual form components have a DisplayValueOnly attribute.

Well, it's not possible since displayValueOnly is an extended attribute which is not in spec. And creating something like this for an extended form like s:form won't be very applicable since a form can contain many components that are not displayvalueonlycapable.
