[I] CallbackRestIT failing in native mode due to a race condition [incubator-kie-kogito-examples]

### Describe the bug
Test `org.kie.kogito.examples.CallbackRestIT.testCallbackRest` is failing in native mode only.

Exception seems like coming from a race condition
