As we've added more keys for internal tika processing (x-parsed-by, etc), and as we've added more keys esp for PDF, we should document some of the more common keys so that folks new to Tika can select which ones they want to focus on.

This work will help adoption of the tika-pipes module, where metadata key mapping can be important.

This work may benefit from the counts I compiled of metadata keys here: https://corpora.tika.apache.org/base/share/metadata-keys-1m-20221006.tgz
