I've responded to that SO question (I saw it before I saw this issue) with sample code, based on the code in the question, that does work.

Testing this with Cordova 3.5.0, and File 1.1.0, I can't reproduce the issue. {{FileEntry.copyTo()}} returns a URL with a {{file:///}} scheme, which is usable by the device for an image source. (If you're seeing {{file:///Users/....}}, that would imply that you're using a simulator, rather than a device, and perhaps theres something up with directory permissions? My test app works on the iOS 7.1 simulator as well, though)

What URLs are you actually seeing that don't work on a device for an image element source?
