Assembly plugin should make a backup "original" copy of the config.xml file

The assembly plugin should create a config.xml.original (config.xml.factory-defaults) file next to the config.xml file.  This way if you really mess up your system, you can restore factory-defaults, or diff the two files.

The current config.bak file is fairly useless since the server overwrites it after every change, which only gives you one level of undo.

There are 2 patches here. The assembly-plugin.patch adds just another line to the plugin.jelly of the assembly plugin.

I didn't know if that warrants a plugin version change. Hence I have provided another patch that does the version change.

If we do the version change, then a version change has to be done in the Openejb too.
