PR quick review NIFI-7610

Someone asked a question the other day about why the latest release,
1.11.4, docker image wasn't available since Docker hub references 1.8 [1].
To clear up confusion I did a quick PR to update the dockerhub readme [2].

We should probably update the release management guide to also update the
Readme.md when doing the DockerImage.txt and Dockerfile. If this is
something we wanted to do I'll create another ticket and PR.

Should be quick and easy to get into 1.12.0 release if we could.

I merged your PR, thanks for the update! Feel free to add additional
Jiras/PRs for appropriate doc updates.
