   ## Overview
   
   This PR does two things: first, it expands the documentation of the existing builtin reduce functions to cover previously undocumented advanced behaviors for `_sum` and `_stats`, and generalizes the structure to allow for more builtins. Then, it leverages that generalization to introduce new documentation for the `_approx_count_distinct` builtin being developed in [COUCHDB-2971](https://issues.apache.org/jira/browse/COUCHDB-2971).
