Port fixes to the AMQP test client recently made in the 5.x version.

* Fixes some thread safety issues in the Transport
* Ensures more timely shutdown of the Connection executor
* Uses a dynamic Proxy to generate Read-Only Proton wrappers instead of the hand crafted versions.
* Adds additional logging for test data
